Preparation

  1. Temper the butter so that it is smooth.
  2. Weigh all the ingredients.
  3. Fry the shallot brunoise briefly in a little vegetable oil.
  4. Temper the steaks, take them out of the packaging, pat them dry to remove excess moisture and bring them to room temperature.
Café de Paris
  1. Briefly fry the shallot in vegetable oil.
  2. Mix all the ingredients with the butter until smooth. Use a whisk or a small mixer.
  3. Portion the butter in small drops with a teaspoon or roll it in foil to cut it into pieces later.
  4. Leave them to rest in the fridge.
  5. Before you serve it, take it out of the fridge so that it is not hard when you serve it.
Steak
  1. Season the steak generously with salt and pepper
  2. Heat the pan and add a little vegetable oil.
  3. Cook the steak for approx. 3 - 4 minutes on each side until golden brown roast.
  4. Add a little vegan butter, thyme, rosemary and crushed garlic and fry the steak in the butter.
  5. Remove from the pan and leave to rest for a few minutes before serving.
Serve
  1. Place the Café de Paris on the steak and allow to melt. Enjoy.
  2. This composition goes well with all kinds of side dishes.
