Preparation

Prepare
  1. Temper the steaks, remove from the packaging, pat dry to remove excess moisture.
  2. Cut the peppers and cabbage into thin strips and marinate with lime juice
    marinate with lime juice, salt, coriander and olive oil. Leave to marinate for 15 minutes.

  1. Heat a frying pan over a high heat. Add a little oil to cover the bottom of the pan.
  2. Add the steak and cook over a high to medium heat roast. Turn the steak as soon as a thick, golden crust has formed.
  3. Cook for 3-4 minutes on each side roast. Remove the steak from the pan.

  2. Coat the steak with the marinade and temper in the oven at 100°C top/bottom heat to 50°C.
  3. Remove from the oven and leave to rest for a few minutes before serving.
Serve
  1. Cut the steak into 2 mm thin slices and arrange in a fan shape on the salad. Use the rest of the marinade as a sauce.
