Udon ramen with planted.duck

1 TBSP.
Oil

Chopped garlic cloves

grated ginger

Spring onion
2 TBSP.
Curry paste

Tin of coconut milk
5 dl
Vegetable broth
1 TBSP.
Soy sauce
1 TBSP.
Rice syrup

Packet of udon noodles
Vegetables of your choice to garnish (we used pak choi and carrots)
Sesame seeds & chili flakes

Preparation

  1. Fry the white part of the spring onion together with the chopped garlic and ginger in a little oil.
  2. When the spring onions are translucent, add the curry paste of your choice and fry for another minute.
  3. Add the coconut milk and vegetable stock and simmer until it thickens a little.
  4. In the meantime, fry the planted.duck and cook the udon noodles according to the packet instructions.
  5. Serve: Pour the broth into a bowl, add the udon noodles and garnish with the planted.duck, vegetables (we used pak choi and carrots) and the green part of the spring onion, some sesame seeds and chili flakes.
