Olive oil

roasted pine nuts
Fresh rosemary
Fresh thyme
black pepper to taste

Preparation

  1. Cut the cherry tomatoes in half and set aside.
  2. In a saucepan, heat a little olive oil with a clove of garlic, sauté gently.
  3. Add the peppers and olives.
  4. Add a teaspoon of tomato paste, cook for 1 minute and then deglaze with the wine. Evaporate the alcohol and then deglaze a second time with half a glass of vegetable broth and add the tomato.
  5. Add the herbs, reduce the heat, cover and cook gently for 25 minutes.
  6. Heat a frying pan with a little vegetable oil over medium-high heat.
  7. Fillets 2-3 minutes per side roast, remove from the pan and cut into 6 large pieces.
  8. Add the sliced fillets to the sauce and mix gently. Season with salt, pepper and a little lemon zest to taste.
