planted.chicken Filet Mediterranean with fried vegetables

Ingredients

red bell bell pepper

Cherry
Black Olives

Agretti
Fresh basil
Oregano

Olive oil
Salt and pepper to taste

Preparation

  1. Cut the peppers and zucchini into even pieces.
  2. Peel the onion and cut it into thick julienne.
  3. Cut the cherry tomatoes in half.
  4. Wash the agretti, gently pat it dry and remove the woody stems.
  5. Mix all the vegetables in a bowl, add a crushed clove of garlic, a little olive oil, salt, pepper, oregano and some fresh basil.
  6. Mix the vegetables carefully so that the spices are evenly distributed. Let the vegetables marinate for 30 minutes.
  7. In the meantime, preheat the oven or grill to 200°C.
  8. Transfer the vegetables from the bowl to a baking sheet lined with parchment paper and carefully spread them evenly.
  9. Bake the vegetables for about 20 minutes or until lightly caramelized.
  10. Heat a skillet (or grill) over medium heat. Drizzle some olive oil over the planted.chicken filet and season it with a pinch of salt. Fry it for about 3 minutes per side until nicely caramelized.
  11. Coarsely chop some fresh basil and season the vegetables with it.
  12. Serve everything together hot as a main course.
